No-Bake NuGo Protein Peanut Butter Cookies

No bake NuGo protein peanut butter cookiesšŸ¤© So easy and filling- the perfect winter healthy (ishšŸ˜‰) treat! Vegan and gluten freešŸŒ±

INGREDIENTS

* 60 ml maple syrup
* 30 ml non dairy milk (we used soy)
* 45 g coconut oil
* 45 g cocoa powder
* 110g oats (rolled or quick depending on the texture you prefer- we used quick for a softer texture)
* 90g natural peanut butter (we used crunchy)
* 0.5 tsp pure vanilla extract
* 1 Pinch sea salt
* 100g dark chocolate (we used bourneville)
* 2 NuGo peanut butter cup bars
* A sprinkle of rice crispies

METHODā€Ø
* Add maple syrup, non-dairy milk, coconut oil, and cocoa powder to a saucepan and bring to a low boil on medium heat, stirring regularly
* Once boiling, let simmer for 1 minute
* Remove from heat and add oats, peanut butter, vanilla, salt, finely chopped dark chocolate & NuGo bars, rice crispies, and mix until fully combined
* Using a tablespoon to make into cookie shapes on a tray lined with baking paper and add any decoration (we recommend more NuGo for a extra protein kickšŸ˜‰)
* Place into fridge and leave to set for 1 hour
* Enjoy!!
